Summer Fruits Chocolate Cake

This beautiful, light, fresh fruit-topped cake is the perfect indulgence for these warm, summer days. I love everything about this cake – the light sponge, the moist and slightly naughty buttery cream filling topped off with a scattering of brightly coloured fresh summer fruits.

And the really great thing is, this summer chocolate cake is totally free from dairy, gluten and soya and so, whatever the celebration or occasion may be, you can guarantee that everyone will be able to enjoy a slice (or two!!)

Gluten free. Dairy free. Soya free.


For the chocolate sponge

  • 225g dairy/soya free margarine
  • 225g caster sugar
  • 4 medium eggs
  • 175g self raising flour, sieved
  • 50g dairy/soya free cocoa powder

For the icing

  • 150g dairy free margarine
  • 300g icing sugar
  • 1-2 tbsp of dairy free milk alternative as required

To decorate

  • Summer fruits, chopped. I used blueberries, raspberries and strawberries
  • A few green strawberry leaves


Note on cocoa powder: I use Green and Blacks Organic Cocoa powder. It has no dairy or in soya in the ingredients but it is handled in a factory that may handle milk. My boys aren’t allergic (just intolerant) so this product is suitable for our use. However, if anyone has an allergy, please be extra diligent and choose carefully.


For the chocolate sponge

  • Pre-heat the oven to 180C.
  • Grease and line 2 sandwich tins.
  • Cream together the margarine and sugar until light and fluffy.
  • Gradually beat in the eggs and fold in the sieved flour and cocoa powder.
  • Divide the mixture between the 2 tins and bake for approx 25 mins until golden brown and firm to touch. I always check with a wooden skewer and, if it comes out clean, you know it’s baked through.
  • Remove from the oven and leave to cool down before turning out on to a cooling rack.

For the icing

  • Measure out the dairy free margarine in to a bowl and soften.
  • Sieve the icing sugar and cocoa powder and stir together adding any extra milk or icing sugar if required.

To decorate

  • Once cooled, use a knife to carefully slice the top off one of the cakes. This will create a flat surface on which to place your fruit.
  • Spread the icing generously over the top of both cakes.
  • Add some fruit to the bottom layer paying particular attention to the outer area.
  • Then sandwich both cakes together.
  • Place the remaining summer fruits over the top of the cake and pop a few green leaves in amongst the fruit to add a splash of green.
