Sweet-Tastic Birthday Cake


It’s been exactly a week since the launch of my new www.happy-little-tummies.com website blog and so to celebrate my boys and I have baked the most amazing sweet-tastic cake that we can all enjoy. Totally gluten, dairy and soya free, this colourful delight is perfect to celebrate any special occasion, especially kids birthday parties.

This is an ideal recipe to do with children and they love getting involved and spending time with you. My two boys made this whole creation pretty much on their own and really enjoyed weighing out the ingredients and mixing them all up with their wooden spoons. The flour went everywhere, but to watch their little faces light up with the delight of it all made my heart swell and the clearing up worthwhile.

They went a bit crazy with the sprinkling of the jelly sweet topping but it was their favourite bit and, I have to admit, it does look pretty cool.

Gluten Free. Dairy Free. Soya Free.


Ingredients

For the sponge
  • 225g dairy free margarine
  • 225g caster sugar
  • 4 large eggs
  • 225g gluten free self raising flour, sifted
  • Zest of 1 lemon
For the topping
  • A selection of jelly sweets.
  • Strawberry jam.
  • Dusting of pink, edible glitter (optional).

 Method

For the sponge
  • Preheat the oven to 190C.
  • Grease a springform cake tin.
  • Let your little helpers beat the eggs and sugar together using a wooden spoon.
  • Add the eggs in, one at a time, beating each one thoroughly before adding the next one.
  • Then fold in the flour and lemon zest and mix thoroughly.
  • Pour your mixture in to the cake tin and pop it in the oven for 25-30 mins or until the cake is cooked.
  • To check whether it’s cooked, I just insert a wooden skewer in to the centre of the cake and if it comes out clean, you know it is cooked through.
  • Then simply leave the cake to cool on a cake stand and remove from the tin.
For the topping
  • Using a knife, cover the cake with strawberry jam.
  • Involve your little helpers here to cover the cake with jelly sweets.
  • I sprinkled the cake with a dusting of pink edible glitter that you can buy from supermarkets but this is optional as it looks just as good without.
