Cool Cupcakes

I do love cupcakes, especially when they’re gluten, dairy and soya free so my boys can enjoy them too! These cupcakes are simple to make and they look super tasty especially when they are iced and then sprinkled with cacao nibs or cranberries. They are also delicious just on their own without any icing or topping.

For birthdays or special occasions, you could top your cupcakes with sweeties or haribos to make them look and taste even more yummy. Or simply pop them in a lunch box and take them out with you for a treat whilst you’re out and about. Simply cupcake-tastic!

Gluten free. Dairy free. Soya free.


For the cupcakes
  • 225g sunflower margarine (dairy free)
  • 225 caster sugar
  • 4 large free-range eggs
  • 225g gluten free self raising flour, sifted
  • Juice from 1/2 lemon
For the icing
  • Icing sugar, sifted
  • Warm water
  • Cacao nibs or cranberries


For the cupcakes
  • Pre-heat your oven to 190C.
  • Beat the margarine and sugar together until light and fluffy.
  • Add the eggs one at a time, beating each one in before you add the next one.
  • Fold in the sifted flour and add the lemon juice.
  • Mix together thoroughly and then spoon in to your cup cake cases.
  • Bake in a pre-heated oven for 20 or so minutes or until they are cooked through and look golden on top.
  • Remove the cakes from the tin and let them cool on a wire rack.
For the icing
  • Sift the icing sugar and add a drop of water at a time until you have a smooth paste.
  • Be careful not to add too much water as it will go runny.
  • When the cakes have cooled, simply poor the icing over the top and sprinkle with cacao nibs or top with cranberries, strawberries. You could even try some sweets, perfect for a birthday party.
